One small container of Barbacoa cooling in prep cooler. Cooling rate was acceptable- however, permit conditions states "The following will be cooled in comm. and transferred to MFU using approved hot boxes while maintaining temperatures of 135 degrees F or greater- Steak, Barbacoa, Rice,
Beans, Pork, Chorizo." Keep cold at 41F or keep hot. Discussed with operator about cooling prior to placing on truck.

Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. CDI- PIC was able to confirm dates and date marked the foods.
