Written procedures shall be prepared in advance, maintained in the food establishment and made available to the regulatory authority upon request that specify compliance with this code. EHS advised to follow cook-cool and cold holding procedures for in-house packaged ready to eat meals due to failure to maintain and following TPHC forms.
