3-304.12; Core; Observed a pizza fork and food scraper stored on dusty and soiled shelving. Store in-use utensils on a clean portion of the food preparation table or cooking equipment. The utensils and storage surface must be cleaned and sanitized every 4 hours. PIC cleaned these surfaces during inspection.
4-501.14; Core; The three compartment sink and drainboards are soiled with a visible brown film along the basin. Faucet and hose attachments are also soiled. The compartments of sinks and drainboards shall be cleaned at least every 24 hours if used. Increase cleaning frequency.
4-601.11(B) and (C); Core; Dust and food residue accumulation observed on the top of pizza oven, inside pizza racks and on a shelf above the handwashing sink at makeline. The nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue and other debris. Increase cleaning frequency. Full point taken for repeat violation. A storage area and enclosure for refuse, recyclables, or returnables shall be maintained free of unnecessary items and clean. Work with other users to maintain this area in a clean condition.
