3-501.16(A)(2); Priority; Several pieces of sliced water melon were observed at 43 - 44F in the display case. Maintain TCS foods in cold holding at 41F or less. Ambient temperature of case measured 38 - 41F. PIC was unsure why melon was out of temperature but melon was relocated to walk-in earlier while case was cleaned. CDI- PIC opted to discard melon since time out of temperature was unknown.
4-501.14; Core; Visible residue accumulation present in produce wash sink basin. Warewashing machines and the compartments/drainboards of sinks used for washing and rinsing equipment, utensils, raw food, etc. shall be cleaned before use, throughout the day to prevent recontamination of equipment and utensils, and at least every 24 hours if used. Increase cleaning frequency.
6-501.12; Core; Floor under shelving in walk-in cooler has some debris. Physical facilities shall be cleaned as often as necessary to keep them clean. Sweep floors in walk-in cooler. No point taken.
