2-102.12 (A) Certified Food Protection Manager (C) No certified food protection manager on shift during inspection. (A) The PERSON IN CHARGE shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM.
4-602.12 Cooking and Baking Equipment (C) Chef Top oven interior is heavily soiled with encrusted food.The Food Contact surfaces of cooking and baking equipment shall be cleaned at least every 24 hours. Increase cleaning to meet the once every 24 hours requirement.
4-602.13 Nonfood Contact Surfaces (C) Gehl chili and cheese sauce dispenser is heavily soiled with build up of caked on chili and cheese sauce. Non food contact surfaces of equipment shall be cleaned frequently to preclude accumulation of soil residues. Increase cleaning frequency to prevent excessive build up.
