4-903.11 (C); Core; Single-use trays on a cart in dry storage closet were stored with the food-contact surface exposed. Single-Service/Single-Use items shall be kept in the original protective package or stored using other means that protect the item until used. Store single-use trays in original package or inverted until they are used. No point taken.
4-601.11 (B) and (C); Core; The shelf above the warewashing sink has food crumbs and residue. Dust accumulation observed on tops of reach-in refrigerators. Keep the nonfood-contact surfaces of equipment free of dust, dirt, food residue and other debris accumulation. Increase cleaning frequency.
