3-302.11(A)(1); Priority; Observed boxes of raw chicken and lamb above RTE foods in the walk-in cooler. Separate raw animal foods from ready-to-eat (RTE) foods and washed/unwashed fruits and vegetables to prevent cross contamination. CDI- foods rearranged.

3-501.18; Priority; A few TCS food items brought out for thawing were observed with a use-by date of 12/22 in the walk-in cooler. Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. Ready-to-eat TCS foods may only be kept for 7 days once thawed. CDI- PIC corrected dates. All other date marking observed compliant. No points taken.

2-303.11; Core; Observed an employee preparing food with a bracelet on. Remove jewelry on hands and arms while preparing food. A plain ring, such as a wedding band, is allowed. CDI- employee educated on proper attire while preparing food. Bracelet was removed.

4-601.11(B) and (C); Core; Old food debris observed under the grilltop on counter. Some cleaning needed on interior and exterior surfaces of refrigeration units. Reach-in freezer has food residue on the bottom. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue and other debris. Increase cleaning frequency.

6-403.11; Core; An employee cell phone was observed on a cutting board. Employee items shall be stored in a designated area to prevent contamination of food, equipment, clean linens and single-service articles. CDI- phone relocated to a designated area where contamination will not occur.
